Granola with cinnamon and banana

Granola is a great breakfast or snack that provides energy and satiety. This Crunchy Granola with Cinnamon and Banana is both delicious and easy to make. Ingredients (about 10 dl granola)

  • 2 bananas
  • ½ cup honey (warmed gently in a water bath to soften)
  • ½ dl coconut oil (heated to liquid form) or rapeseed oil
  • ½ tsp vanilla powder
  • 1 tsp cinnamon
  • 1 pinch of sea salt
  • 6 dl large oatmeal
  • 1 cup chopped walnuts or pecans
  • 1 dl pumpkin seeds
  • 1 dl coconut flakes (can be omitted)

Do like this

  1. Preparation: Set the oven to 160 degrees Celsius with hot air. Line two baking sheets with parchment paper to prepare for the granola.

  2. Mix the wet ingredients: In a bowl, combine the bananas, the liquid oil and the honey. Use an immersion blender to blend everything into a smooth batter. Add vanilla powder, cinnamon and a pinch of sea salt, and mix well.

  3. Mix the dry ingredients: In another bowl, mix the large rolled oats, chopped walnuts or pecans, pumpkin seeds and coconut flakes (if using).

  4. Combine everything: Pour the wet mixture over the dry ingredients and stir until everything is well combined.

  5. Bake the granola: Spread the granola mixture evenly on the two baking sheets. Bake in the oven for a total of 45-60 minutes. After about 10 minutes, check the granola and stir to ensure it is toasting evenly. After about half an hour you can sprinkle on the soaked coconut flakes (make sure they are drained of excess water).

  6. Prepare the granola: Feel free to switch places on the trays during baking to get an even color. The granola is ready when it has acquired a golden brown color and a wonderfully crunchy texture.

  7. Cooling and storage: Let the granola cool completely before storing it in a tight glass jar. It stays fresh for a long time and is perfect to use in yogurt, as a topping on fruit or just to eat as is!
