
Lovely and tart lemon cake with honey glaze
This lemon cake is perfect for anyone who loves a fresh and tart taste. Together with the sweet honey glaze, it becomes a wonderful combination that is suitable both for coffee and as dessert.
Ingredients
For the cake:
- 150 g room temperature butter
- 125 g of sugar
- 2 eggs
- Finely grated rind from 1 lemon
- 100 g spelled flour
- 100 g wheat flour
- 1.5 dl milk
- 1 teaspoon baking powder
- 2 teaspoons vanilla sugar
For Honey Icing:
- 3 tablespoons honey (can be raspberry honey for a milder taste or forest honey for a stronger taste)
- Juice from 1 lemon
- 100 g icing sugar
Cooking
Beat the batter: In a bowl, beat together the butter, sugar and grated lemon zest with an electric beater or in a food processor until the mixture is light and creamy. Add the eggs, one at a time, and beat until well combined.
Mix the dry ingredients: In a separate bowl, mix the spelled flour, wheat flour, baking powder and vanilla sugar. Add the dry ingredients to the batter alternately with the milk, and mix gently until everything is well combined, but avoid overworking the batter.
Bake the cake: Pour the batter into the prepared loaf pan and bake in the oven for 40-50 minutes, or until the cake is cooked through (check with a toothpick; it should come out clean).
Make the honey glaze: While the cake is baking, prepare the glaze. Heat the honey and lemon juice in a small saucepan over low heat. Remove from the heat and stir in the icing sugar until the glaze is smooth and lump-free.
Apply the glaze: When the cake is ready, remove it from the oven and let it cool in the tin for 10 minutes. Poke small holes in the cake with a toothpick or a thin skewer, and carefully pour the glaze over so that it runs down the cake.
